Caramelised Banana Syrup
Ingredients:
-
2 ripe bananas
-
1 cup brown sugar
-
1 cup water
-
1 tbsp pure vanilla bean extract
-
Pinch of sea salt
-
1 tsp ground cinnamon
-
1 tsp ground nutmeg
Method:
-
In a saucepan, combine bananas, brown sugar, water, cinnamon, and nutmeg.
-
Simmer over low heat for 10 minutes, stirring occasionally, until the banana breaks down and the mixture begins to thicken.
-
Gently mash the bananas into the syrup as it cooks.
-
Remove from the heat, then stir in the vanilla extract and a pinch of sea salt.
-
Strain through a fine mesh sieve for a smooth syrup, or blend if you prefer a thicker consistency.
