Banana Bread Latte

The comforting flavours of autumn, with caramelised banana syrup and salted cream.

Caramelised Banana Syrup
Ingredients:

  • 2 ripe bananas

  • 1 cup brown sugar

  • 1 cup water

  • 1 tbsp pure vanilla bean extract

  • Pinch of sea salt

  • 1 tsp ground cinnamon

  • 1 tsp ground nutmeg

Method:

  1. In a saucepan, combine bananas, brown sugar, water, cinnamon, and nutmeg.

  2. Simmer over low heat for 10 minutes, stirring occasionally, until the banana breaks down and the mixture begins to thicken.

  3. Gently mash the bananas into the syrup as it cooks.

  4. Remove from the heat, then stir in the vanilla extract and a pinch of sea salt.

  5. Strain through a fine mesh sieve for a smooth syrup, or blend if you prefer a thicker consistency.

  6. Store in the fridge for 1–2 weeks.


Banana Bread Latte with Salted Cream
Ingredients:

  • 30 mL caramelised banana syrup (or more to taste)

  • 70 mL Brimm coffee concentrate

  • 200 mL milk of choice

  • Ice

  • 2 tbsp thickened cream

  • 1 tbsp milk

  • Pinch of sea salt

Method:

  1. Fill a 500 mL glass with plenty of ice.

  2. Pour in the caramelised banana syrup, Brimm coffee concentrate, and milk.

  3. In a separate jug, combine the thickened cream, milk, and a pinch of sea salt.

  4. Whip the cream mixture using an electric whisk until light and fluffy.

  5. Gently pour the salted cream over the latte.

  6. Top with more ground cinnamon for a decorative touch.

  7. Stir to combine and enjoy!
